Carolyn has taught Home Economics for many years at both secondary school and TAFE. In the year 2000, Carolyn was awarded the Home Economics Institute of Australia (NSW Division) High Achiever Award.
For the past 35 years she has been part of the Public Health Team, Nutrition Services, Central Coast Local Health District.
Working on a number of Community Health projects, Carolyn co-authored “Caring for Children, Food Nutrition and Fun Activities” used by child care centres throughout Australia.
Carolyn works extensively in the area of nutrition for older Australians.
In this capacity, Carolyn has co-written a number of nutrition resources for older people including:
- “Eating Well. A Nutrition Resource for Older People and their Carers”, designed to keep frail older people well nourished, enabling them to remain independent in their homes for as long as possible.
- ‘Best Practice Food and Nutrition Manual for Aged Care Facilities’ The manual aims to maximise residents’ mealtime enjoyment and minimise undernutrition in Aged Care Homes
Carolyn’s presentation today focusses on the manual chapter “Swallowing and Food Texture”. This chapter has been updated to reflect the new and current food texture standards – International Dysphagia Diet Standardisation Initiative (IDDSI)
